The BEST Chocolate Keto Friendly Fat Bombs

I’m finally sharing the recipe to my Instagram “famous” chocolate fat bombs! These delicious morsels have been my BFF since I changed up my diet about five months ago. They are low carb, high fat, no refined sugar balls of amazingness. Oh, did I mention they take hardly any time?

You’ll need:

1/2 lb. salted butter, softened

1/3-1/2 cup cocoa powder

1 tsp. vanilla extract

3 TBSP. honey

Mix ingredients together. Spoon onto a cookie sheet lined with parchment paper. Freeze or refrigerate for 15 or more minutes. Transfer to a container of your choice. Freeze or refrigerate.

I usually get 54 fat bombs using a small spoon. If you get roughly 50 in your batch, the nutrition facts are 38 cals, 1.2g of net carbs, 1.1g of sugar, .1g of protein and 3.7g of fat.

Healthy Summer Snacks to Fill Your Cooler

I don't know about you, but I love to enjoy the summer weather. Summers in Wisconsin are very short, but they are glorious.  I don't live near a beach, but I am lucky to live near several lakes. For my family, summer = boating. 

But you can't go boating (or to the pool or beach) without SNACKS! 

Here are my tips:

1. Start with veggies. Veggies are always refreshing on a hot day. 

2. Add a little something to nibble on. Nuts are great!

3. And maybe something sweet. Pamela's Lemon Shortbread Cookies are my current favorite. Yum, yum.

4. Don't forget to hydrate! My Hydro-Flask is a must-have for a day in the sun. This water bottle keeps my drinks cold for an unbelievable amount of hours. 

Sparkling Lemonade "Granita"

I admit it, this is not truly a granita. I'd like to think it's the easier, faster way of making a granita-esque treat.

I definitely eyeballed this recipe so adjust the proportions to your liking.

Sparkling Lemonade "Granita"

1/4 Cup Coconut Millk

Juice from 1 Lemon

Zest from 1 Lemon

5 Ice Cubes

3-5 Drops of Stevia

Blend the above ingredients together in a blender or Vitamix.

Use a spoon to ladel the "granita" into fancy ice cream glasses and top with a splash of Lemon flavored sparkling water. Enjoy!

 

Shrimp Taco Platter

Confession.  I am a Holistic Nutritionist that does not love to cook. In fact, I kind of loathe it. There are thousands of clean eating blogs with gourmet recipes and fancy ingredients to wow the most proficient chef. This is not that blog.

The recipes on this blog are for the girl who is too lazy to cook, or too busy to cook, but still wants to eat a healthful diet.

I'm obsessed with tacos. I could eat tacos every single day. The typical seasoning packet, greasy ground beef, and scant shredded lettuce just isn't going to cut it in a healthful diet. Upgrade the basic ingredients and add some fresh toppings. Plate it pretty and your guests will never guess it only took you 10 minutes to prepare.

SHRIMP TACO BAR

FEEDS 2

1/2lb. Raw Shrimp (peeled & deveined- seriously, just buy them this way. It's too much work)

Corn Tortillas

Shredded Cabbaged (top with the juice of one wedge of lime, a splash of olive oil, and a dash of salt)

1 Lime- wedged

1 Avocado or Guacamole

1 Mango

1 Bunch of Cilantro

DIRECTIONS

Prepare you slaw as described above

Peel & cut the avocado & mango

Plate the tortillas & the toppings

Bring a pot of water to a rolling boil. Drop in the raw shrimp. Boil for 2 minutes until pink & plump. Chop when cooked & add to your platter of toppings.
